~*Simmering On The Stove Top*~

Hello Dear Friends! It is cold & rainy here... so what better way to warm the bones than homemade soup! Simmering on the stove top today is Calico Chicken Soup... YUM~O! This soup is chock full of veggies & goodness! You just can't get any better than that!



Calico Chicken Soup

3 tablespoons olive oil
1 cup onion, minced
2 celery stalks, minced
2 garlic cloves, minced
1 pound boneless chicken breasts, skinned and cubed
1 (14.5 oz.) can~diced tomatoes
1/2 cup carrots, diced
6 cups chicken broth
1/2 teaspoon ground thyme
1/8 teaspoon ground white pepper
1 teaspoon salt
1/2 pound green beans, cut into 1 inch pieces (I use frozen)
1/2 cup fresh corn (again, I use frozen)
1 cup zucchini, diced
1 small red pepper, minced
2 tablespoons finely chopped parsley

In a 4 quart stock pot, heat the olive oil. Add the onion and celery and saute' for 5 minutes on medium heat. Add the garlic and chicken ~ saute', stirring often, for 10 minutes. Add the tomatoes, carrots, chicken stock, ground thyme, white pepper, and salt. Bring to a boil, lower heat, cover and simmer for 20 minutes. Add the green beans, corn, zucchini, and red pepper. Cover and cook for 10 minutes. Stir in the parsley. Serve & Enjoy!

Yield ~ 6 servings

(And because I do try to watch my Weight Watchers points... I calculated one serving to equal 5 points.)

Mmmmmmm... I'm warmer & cozier just thinking about it... but then again, I can smell it while I'm typing too! :)

  1. I have never made vegetable soup with chicken, have always used beef. Now you are making me hungry for soup;)

    Your veggie soup sounds yum-O! I think we're having white chili tonight....will have to give your soup a whirl this fall or winter.
